Once the car is upgraded it CANNOT be downgraded and the 5.1 disc is not even compatable with the system in your car since its generation 5. Asking your question over and over again and in different forums won't change the answer. The vehicle cannot be downgraded to version 5.1 Your friends 07 ES350 disk isn't even v 5.1, its v 6.1 You cannot downgrade the navigation software once it has been upgraded, under any circumstances.
