I currently use 275/70R-16 tires on my 2002 LX470 but unhappy with the handling all these years.  Do any of you know if I can go with lower profile tires using the same rims?  Any suggestions?

Size is not the only consideration. Make and type of tire plays a big part. Tires with more sidewall ride better, and protect the rims better from pot holes. Tires also have to have the capacity to handle the weight you are hauling.

That said, if you are just using this on pavement and want to improve the on pavement handling, get a stickier tires, with a wider footprint and a stiffer sidewall. Getting a high performance summer tire like the Michelin Pilot Sport 4s, will make a bid difference, even in the same size. If you need an all season capable tire, check out the Nokian WR5
