Steve's Studs

I have just recently bought my GS 350 and am still getting used to it. I have only driven it so far in the regular Drive gear. When is it advisable to use my paddle shift and why? Also I believe i have the ability to go into a "M" manual mode. When is this advisable and why? Thank you for your replys
