Get yourself some great upholstery adhesive perhaps some shallow staples, replaced the door vinyl in less than 2 hours... the only thing you would need to stitch would be the door handle. The best thing is to reference with an upholstery book that covers the basics of contours, and to watch the concave. An independant trimmer might be able to provide you with advice as well. As far as the dash goes.. a simple task in comparison, watch the stretching, get a vinyl that has some stretch but not alot, and you should be set.
