The Saga Of The Cats: Part I

Just finished gutting my 3rd cat, which is a MAJOR pita unless you have something that resembles a jackhammer. Anywho, I just discovered that I can't see any catalysts in either of the front cats... great. So, my options are to either replace the cats or delete the sub O2 sensors. If it is the first, what would be the best cats that would fit? If it is the latter, how would i go about deleting the O2 sensors? I know that there is a product out there that can do it, but a DIY would be better. I've also had a check engine light that's been blinking on and off and I think that this could solve that.
