Lately while working on my 91 ls400 I started driving it without the cooling fan shroud and it's running hot. Will that cause this problem. When I'm moving the temp begins to go down but stop and go driving it seems to get hot faster

My car started running hot, everything checked out OK. I put my hand over the exhaust in the rear of the car and could barely feel anything. I ordered 2 new cats but when I removed the old ones they appeared to be fine. Could my 4 mufflers be the culprit or there looks like a resonator of some sort before the mufflers where all the pipes come together could be the issue
