I cant seem to find a "how to" install springs. looking at Tanabe NF210s or Eibach Pro-Kit, but dont want to do the install until i have an idea what im doing.

also looking at putting either MMR 19 x 8.5 Gt-1s or TSR Snetterton 20 x 8.5s on. Not into the staggered look. Any help would be appreciated.

How to install coilovers

Click on that. it's for coilovers, but the rears would be the same process for you. And it isn't any different for a GS. Maybe some bolt sizes and locations, but that's it.
